Bairdi Crab Clusters

5 Things You Probably Didn’t Know About Giant Snow Crab (Bairdi Tanner)

If you’ve ever enjoyed sweet, tender crab legs at a restaurant or seafood market, there’s a good chance you’ve eaten snow crab. But did you know not all snow crab is created equal?

At Alaska Fish & Crab Co., we’re proud to offer Giant Snow Crab—also known as Bairdi Crab. This premium, wild-caught Alaska seafood is prized by top chefs, commercial crabbing crews, and seafood connoisseurs alike for its exceptional sweet flavor, firm texture, and extra-generous portions.

While it often shares the spotlight with King Crab, Bairdi is considered by many Alaskans to be the best-kept secret of the North Pacific. Here are five things you might not know about this incredible ocean delicacy:

1. It Is Significantly Larger Than Regular Snow Crab

While both belong to the snow crab family, Bairdi Tanner Crab (Chionoecetes bairdi) is a distinctly different species from the more common Opilio snow crab (Chionoecetes opilio). Most commercially available snow crab legs in grocery stores come from Opilio crabs, which typically weigh between 1.5 to 2.5 pounds.

Male Bairdi Tanner crabs, on the other hand, are true giants of the deep. They frequently reach 3 to 5 pounds or more, featuring impressive leg spans that stretch up to 3 feet across. Their massive size translates to thicker, stockier leg clusters that look as jaw-dropping on a serving platter as they taste on the fork.

2. You Get a Much Higher Meat Yield Per Leg

If you’ve ever felt frustrated spending ten minutes cracking through thin crab shells only to end up with a tiny shred of meat, Bairdi Crab is your solution. Because Bairdi crabs have broader body cavities and stockier, thicker-walled legs, cracking into them is vastly more rewarding.

Bairdi yields roughly 20% to 30% more meat by weight than standard snow crab. A single Bairdi leg can contain three times plus the meat volume of a standard Opilio leg! This means far less effort picking through shells and much more time enjoying big, unbroken, juicy chunks of crab meat.

3. The Meat Is Sweeter, Firmer, and Darker

Standard Opilio snow crab meat is delicate, flaky, and mild. Bairdi meat, by contrast, occupies a culinary realm of its own. It features larger individual meat strands, a firm and succulent bite, and a noticeably richer, sweeter flavor profile.

The meat inside a Bairdi shell boasts a gorgeous reddish-orange hue and retains its natural moisture exceptionally well during cooking. In fact, many professional chefs rank Bairdi above King Crab because it delivers a similarly sweet, robust flavor profile, but with thinner, smoother shells that are much easier to snap open by hand without needing heavy-duty crab crackers.

4. Cold Alaskan Waters and Extreme Ocean Depths Create Superior Quality

Our Giant Snow Crab is wild-harvested directly from the icy, pristine waters of Alaska—often at depths ranging between 60 and 600 feet.

Living in these freezing, high-pressure environments forces the crabs to build up dense muscle tissue and natural glycogen stores. This natural ocean adaptation is precisely what creates the signature firm texture and natural, delicate sweetness that make wild Alaska seafood world-renowned. Nature does the hard work underwater, resulting in a product that aquaculture or warm-water crabs simply cannot replicate.

5. Simplicity Is the Best Recipe

One of the absolute best qualities of Giant Snow Crab is that it doesn’t require complex culinary skills or secret sauce recipes to taste extraordinary. Because the meat is packed with rich natural flavor, less is more:

Thaw & Heat: Since most Alaska crab is flash-frozen at sea to lock in ocean freshness, simply thaw your legs overnight in the refrigerator.

Steam or Bake: Gently steam or bake the leg clusters for 3 to 5 minutes just until they are heated through.

Serve: Pair immediately with warm drawn butter, a squeeze of fresh lemon, and a sprinkle of sea salt. Let the sweet, clean taste of the North Pacific shine!

You’re Supporting More Than a Meal

When you order from Alaska Fish & Crab Co., you aren't just buying seafood—you’re supporting a fisherman-owned business that believes in quality, transparency, and sharing the true story behind every catch.

Commercial crabbing in Alaska requires immense skill, patience, and unwavering respect for unpredictable seas. Long before crab pots ever hit the water, fishing crews spend endless hours rigging gear, monitoring weather, and preparing for brutal days on the ocean.

Every order you place directly supports the hard-working fishermen, coastal families, and sustainable fishery traditions that keep wild Alaska seafood thriving for generations to come.
